🌾 What is Izumo Soba?ー出雲そばってどんなそば？
Izumo soba is a regional specialty of Shimane Prefecture.
出雲そばは、島根県を代表する郷土料理です。
Unlike regular soba noodles, Izumo soba is made with whole buckwheat grains, giving it a darker color, richer flavor, and slightly firmer texture.
通常のそばと違い、**そばの実を丸ごと挽いた「挽きぐるみ粉」**を使って打つため、色が濃く、風味豊かで、しっかりした歯ごたえが特徴です。
